Beneath the Waves listeners have requested additional programs on food, especially from Hawaii.  In response food historian and writer, Arnold Hiura, live from Papaiko, Big Island, Hawaii, has agreed to be my special guest.  Hiura has written two popular books entitled “Kau Kau: Cuisine and Culture in the Hawaiian Islands” and “From Kau Kau to Cuisine: An Island Cookbook Then & Now” and many other publications on the subject.
